I did it again, I failed to go shopping. I used what I had on hand. I made a kale pineapple smoothie. I had about 2 cups of kale and the same amount of romaine. I had purchased a pineapple earlier in the week when I took Jackson to the vet.
OFF TOPIC: There is a fun produce stand right next door to our vet. Here is a shout out to Dr. St. John at Belcher Animal Clinic in Clearwater, Florida! The weather was cool enough that I could just pop in real quick and grab a few things while Jackson waited patiently in his carrier crate. He had been violated by the veterinarian assistant so he needed a little alone time.
BACK ON TOPIC: The produce stand was on a whim and I didn’t have a list. The pineapples looked great and I’d wanted to buy a fresh pineapple for some time. I’d never cut one open or peeled a fresh pineapple.
As I collected the ingredients for my green smoothie, I began to look over my pineapple with its protective coat and pointy green hat. I realized I had no idea how to start. So, I did what any lady in today’s information age would do, I Googled it! Easy enough! I cut the edible parts into cubes. I took what I needed and refrigerated the rest.
I had a recipe for a kale-pineapple smoothie, but it called for six cups of kale. I only had two. I compromised the recipe and created something that eventually tasted good.
Day 2: Kale-Pineapple Base
- 2 cups of 100% coconut water
- ~2 cups of kale leaves ripped up
- ~2 cups of romaine ripped up
- ~1 cup of fresh pineapple cubed
- 1 apple (medium in size and sweetness) – added late
Directions: Put into your blender in the order listed. Blend well and use your tamper if necessary. Pour and enjoy!
Yields: About 5 cups (therefore meeting my 1 quart requirement)
At first, I didn’t care for this smoothie. It was too green tasting. I could have forced myself to drink it because it wasn’t repulsive. I know my green tooth is getting stronger because a few weeks ago I would have gagged on this smoothie.
I decided to do what I’d been told – add more sweet fruit if the smoothie is too green to taste. I added an apple and that was perfect!! I couldn’t believe just how much an apple altered the flavor.
I enjoyed every drop!
I am reading that our ‘green tooth’ gets stronger and will tolerate heavier green tasting food the more we enjoy them. The green taste that I am referring to comes from the chlorophyll in green plants. In the meantime, fruit really aids in the pleasure of the meal.
